Pepperhouse Gourmaise by Boar’s Head

Boar’s Head is a very popular brand of deli meats, especially in New York it seems.  Nearly every block there seems to be a sandwich shop touting its offering of Boar’s Head roast beef, turkey, etc.

Now Boar’s Head also offers a savory spread called Pepperhouse Gourmaise™.  It’s a zesty blend of black, white, pink and green peppercorns that are then mixed with Boar’s Head Mayonnaise and its Deli Mustard.

The adjective “zesty” is not an understatement.  I’m the sort of person who almost always wishes for things to be more peppery, yet this was perfect as-is.  It has sizable chunks of peppercorn.

Naturally, Pepperhouse Gourmaise is wonderful on sandwiches.  It’s also a nice dip for crackers, pita bread or veggies.  Adventurous cooks could also add it to recipes wherever some creamy, peppery zest is needed.

Boar’s Head Pepperhouse Gourmaise can be purchased at supermarkets and gourmet food stores for an approximate retail price of $3.99.

Eden Organic Yellow Mustard

I enjoy the Eden Organic brand of yellow mustard.

Ingredients: Raw Organic Apple Cider Vinegar, Water, Organic Yellow Mustard Seed, Eden Sea Salt, Organic Turmeric, Organic Paprika, Organic Garlic.

It has a strong mustard taste and a bright yellow color.  A little goes a long way so I’ll probably have this jar for awhile.

Homemade Salad Dressing: Tarragon vinaigrette

I bought a bunch of fresh tarragon at the market because I don’t think I’d ever bought fresh tarragon before.

Then it sat in my fridge for a while, making me feel guilty.

In the nick of time I used it in a delicious homemade salad dressing.

Now I can buy fresh tarragon again!

Fresh Tarragon Vinaigrette

Adapted from Wasabi Bratwurst’s Everyone’s Favorite Fresh Herb Salad Dressing

What I Changed and Why: Kept the fresh herb to tarragon only to highlight its flavor; Kept the vinegar to just balsamic for simplicity; Adjusted other spices to taste.

3 tablespoon fresh tarragon leaves, finely minced
1/2 Tbsp finely chopped garlic
1 1/2 Tbsp Dijon mustard
½ teaspoon kosher salt
½ teaspoon black pepper, fresh ground
3 tablespoons balsamic vinegar
3 tablespoons extra virgin olive oil
Salad greens (such as one small head red leaf lettuce)

1. Shake all of the ingredients together in a jar with a tight fitting lid. (If you do not have such a jar then first whisk together all ingredients, adding the fresh herbs at the very end.)

2. Toss the greens & the dressing in a large bowl and plate it.
